Tarte Aux Poires



  • 2 eggs
  • 1tsp vanilla extract
  • 1tbsp cornstarch
  • 1/4 cup milk
  • 1 sheet Puff Pastry
  • Pears
  • Cinnamon (optional, usually for the apple version)


Preheat the oven to 400 degrees Fahrenheit.

Defrost your Puff Pastry sheet and roll out so it fits the size of your dish. Cut the edges off if there’s excess. Place in the dish.

Skin the pears. This is not necessary but it is usually better without the skin. Cut the pears into 4ths of slices and place in the dish, on top of the Puff Pastry. We usually place them in a spiral shape. You can put as many or as few as you want but we like a lot.

Prepare the custard part. For this mix together the eggs, vanilla extract, sugar and cornstarch in a bowl. Then add in the milk. Stir. (The vanilla extract and sugar measurements can be adjusted to your taste).

Pour the custard mixture over the pears in the dish and place in the oven until golden brown (~35 minutes).
